How to Make Corn Flake Crumbs
Corn flake crumbs are getting harder to find at the grocery store. We use these mostly as a coating for Frozen Tofu Chicken Nuggets. This technique is super easy and very similar to the method used to make Seasoned Bread Crumbs. Corn flake crumbs are easier to prepare than bread crumbs because you don’t have to start with toasted bread. Most of the time we use these corn flake crumbs to prepare Frozen Tofu Chicken Nuggets.
Can I Use Corn Flake Crumbs in Place of Bread Crumbs?
Yes. Keep in mind that corn flake crumbs will be crunchier than bread crumbs. They will also have a slightly different taste.
Ingredients:
4 cups corn flakes cereal
1-1/2 Tablespoons dried parsley flakes
2 teaspoons rubbed sage (see notes below)
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
Utensils:
1 Ziploc one-gallon bag
rolling pin
Instructions:
- Place 2 cups of corn flakes cereal in a Ziploc one-gallon bag and seal the bag.
- Roll the rolling pin over the bag filled with corn flakes. Roll all of the way to the edge of the bag so that you do not have any large corn flakes left.
- Continue until the corn flake crumbs have reached an even and desired consistency. Try not to over-do the rolling pin. You do not want to end up with corn flake powder. Repeat for the remaining 2 cups of corn flakes.
- When you are done, place all of the corn flake crumbs in a bowl. You should have about 2 cups of corn flake crumbs.
If you plan to use these corn flake crumbs when baking cookies, pies, or cakes, then do not add the seasonings listed below.
Seasoned Corn Flake Crumbs
Add the 1-1/2 Tablespoons dried parsley flakes, 2 teaspoons rubbed sage, 1 teaspoon paprika, 1/2 teaspoon salt, 1/2 teaspoon garlic salt, and 1/4 teaspoon black pepper, to the bowl of corn flake crumbs. Gently mix everything together.
Store unused corn flake crumbs in a jar with a tight fitting lid. You can also use any other container that you may have on hand that you can seal.
Notes:
- A word about sage: Sage comes in at least three different forms: whole sage leaves, rubbed sage, and ground sage. I used rubbed sage because it was what I had on hand. Ground sage will work just as well.
- Are corn flakes crumbs gluten free? In most cases they are not gluten free. Most corn flakes cereals contain malt which has gluten in it. You can find a list of gluten-free corn flake cereals here.
- Make this ahead of time and store in an airtight container. This will make it possible to prepare Frozen Tofu Chicken Nuggets on a moments notice.
