Here is a vegetarian version of the always-popular chicken nuggets that is made with frozen tofu and corn flake crumbs.

Tofu Chicken Nuggets Recipe
Here is another great way to use frozen tofu. This recipe has a lot in common with Tofu Fish Sticks. The tofu preparation is essentially the same. You freeze the sliced tofu as directed in the recipe How to Freeze Tofu. Once you thaw and press the tofu, then you cut across each slice twice to make three “nuggets” of the same size. When finished, you should have 24 tofu chicken nuggets. Each serving consists of six nuggets.
Although I prefer to fry the tofu nuggets, I have also included instructions for baking at the end of the recipe.
Ingredients:
1 (16 oz.) tub extra firm tofu
2 Tablespoons all-purpose flour
3 Tablespoons milk
1 egg, lightly beaten
1 cup seasoned homemade corn flake crumbs
Canola oil
Instructions:
- Slice the extra firm tofu crosswise into eight pieces and place on a cookie sheet. Now place in the freezer. For detailed instructions follow this recipe, How to Freeze Tofu. After the tofu is frozen solid (this can take up to 12 hours), then you can remove it from the freezer and defrost (thaw) the tofu. If you usually keep frozen sliced tofu on hand in your freezer, then congratulations! All you have to do is defrost eight slices from the freezer. Press the thawed tofu between your hands over the sink to remove as much water as possible.
- Place the 2 Tablespoons all-purpose flour in a small bowl. Stir in the 3 Tablespoons milk until you have a smooth paste. Stir in the lightly beaten egg. Place the 1 cup seasoned homemade corn flake crumbs in a separate bowl of about the same size.
- Cut each slice of thawed tofu crosswise into three equal-size pieces. You will have 24 pieces when done. Dip a piece of tofu in the egg batter and then into the bowl of corn flake crumbs.
- Fry the tofu chicken nuggets in a small amount of canola oil over medium heat for 3 to 5 minutes. The oil should be about 1/4 inch deep. Turn the tofu nuggets and fry for another 3 to 5 minutes.
- Drain on paper towel and serve with Thousand Island Dip and Spread.

- Follow steps 1 through 3 from above. Place the Tofu Chicken Nuggets on a baking sheet lined with parchment paper.
- Bake in a preheated 350º oven for 15 minutes.
- Turn the tofu chicken nuggets over and bake for an additional 15 minutes. The baked tofu nuggets will not be as dark in color as the fried tofu nuggets. Serve.

This is the best way that I have found so far to make Tofu nuggets. I had frozen the tofu twice, intending to use it for another recipe but liked this one better. I used a tofu press on the sliced pieces (8 pieces) then followed the recipe. I chose to bake the nuggets and increased the temperature to 375 for about the same time. My grandson liked them and I thought they were much better for texture than others I have made. I would like to find a way to get more flavor inside the nuggets, possibly by vacuum sealing them with flavored, seasoned broth. Thank you for sharing this great recipe!

Thanks. I’m glad that you enjoyed the recipe. Probably any good vegetable oil will work except olive oil. It tends to smoke at high temperatures.
